Blogiversary

Its been 1 year!!! I am so happy and I cant wait to share with you about the past ,present ,and future of this blog.
Lets start with the past. I started this blog on June 13th 2015. My first post was one of my most visited one. It was Diary of a Wimpy Kid: Book 1 Review!!! I got 32 page views for that post.
I am so happy about the progress  of this blog in fact right now I have 753 page views!!!
Too celebrate though we need an ECOTASTIC B-Day!!! Here is some things you can do even for a regular B-Day!!!
  • Make a homemade banner instead of buying because 1 it saves money and 2 you can personalize it however you want. Also too make my banner I used  Eco Evolution Crayola Crayons.

  • I wanted to cook something that I could use stuff from the garden. Also if I used something from the garden it would save money because fruits from the grocery store cost a lot of money. I decided on Rhubarb Strawberry Crumble. I have already posted how to make this just look at the post below.

In the comments below tell me what your favorite posts are or what you want to write more of!!!

Here is a little video from highlights of this year:

Vegan Strawberry Rhubarb Crisp

I wanted something easy to make and I could use fruit from my garden. So I decided would Strawberry Rhubarb Crisp. I thought this was nice in the summer too.

What you need:

2 cups of fresh Rhubarb cup in 3/4'' pieces

2 cups organic strawberries cut in half

1/4 cup of sugar

1/2 tablespoon cornstarch

1/2 cup of vegan butter

1 tablespoon orange-juice

3/4 Cup all-purpose unbleached flour

1/2 Cup organic rolled oats (not quick-cooking)

1/2 cup dark brown sugar, packed  down

1/2 cup chopped nuts- pecans, walnuts, or almonds

How to:

1. Combine rhubarb, strawberries, sugar, cornstarch and orange juice in a bowl.

2. Stir together the flour, oats and nuts in a separate bowl then add the buttery spread and combine well with a fork, pastry blender or your fingers until the mixture forms clumps.

3. Pour the fruit mixture into an ungreased baking dish and top with the nut mixture.

4. Bake in a preheated 400° oven for 30 – 35 minutes until golden brown and bubbly.

                                           Hope you enjoy!!!

Ecotastic Kid Tip: Get the Rhubarb and Strawberries from your garden or get it from a local farmers market!!!
